I love making homemade bread, especially when it turns out to be something better than I had expected.
I made the bread according to the recipe’s specifications, and I think my bread didn’t rise as much as it should have, even though I’ve done all of the things I’ve done in the past to get the bread to rise. Turn on the oven, switch it off, let it cool down a bit, then let the dough rise, covered, in the warm, draft free, humid environment. It has always worked in the past, but for some reason, didn’t this time, even though I tacked on extra rising time.
Halfway through the baking time, I noticed the loaves were getting a bit dark, so, I covered them with aluminum foil. This seemed to help.
Although my loaves are a little darker in color than the other bakers, this bread is fabulous. I kept one loaf for my and the hubby, and another loaf went to a friend. She and her family had it Sunday evening with a turkey dinner, and we have had it the last few days, slathered with peanut butter or butter and strawberry jam.
