I was SO thrilled to see this week come around on the TWD schedule.
I’m sure when we all joined Tuesdays with Dorie, we thought we’d pick up a few recipes, make a few friends, and learn to bake different goodies. I don’t think any of us expected it to pick up steam and change us all for the better. I think one of those unexpected surprises have been the friends I’ve made along the way. Jill just happens to be one of those people.
We joined TWD at almost the same time two years ago and have baked our way through some wonderful recipes. Some were complete failures, some were surprising, some tasted and looked terrible, and some were recipes we’ll probably bake again and again for the rest of our lives. Along this journey, Jill has become a very special friend. And I just wanted to say “thank you” to her for all of her guidance, her kindness, her emails, and most of all, just for being a friend. I wish Jill lived right around the corner, but she doesn’t. You see, Jill and I have never met-we live hundreds of miles apart. But, I know, if we lived closer, we’d be the greatest of friends. And I hope that I’ll get to meet her. But, until then, we’ll just keep baking along together.
Jill chose Cardamom Crumb Cake which I made into muffins. I skipped the orange zest-mainly because I forgot to buy an orange for the recipe. I got 11 muffins out of the batter and instead of using regular coffee, I dissolved some instant espresso in water and that did the trick. I loved the subtle flavor the cardamom gave the muffins and the coffee was a pleasant backdrop.
We loved these-we ate a few, and I put the rest in the freezer for a Christmas morning treat!
