This little cake was a snap to whip up. I used a cup and a half of flour instead of the one cup of flour plus 1/2 cup of finely ground almonds that the recipe called for and it worked well. I used vanilla yogurt instead of plain Greek yogurt and used three small loaf pans instead of one large loaf pan, so that I could share these little babies with friends. This is an excellent little cake to give as a gift and it freezes well!
Instead of the marmalade glaze, I made a confectioner’s sugar glaze with lemon juice and it turned out beautifully! I baked my mini loaves for 30 minutes and they turned out moist and delicious! This is definitely a recipe that will be repeated in our house! Thanks again, Liliana!!!!
